Easy Spanakopita Triangles That Are Easier Than They Look

These Greek spanakopita triangles are the kind of appetizer I make when I want something people can pick up with their fingers and keep reaching for. Crisp, buttery phyllo surrounds a spinach and feta filling, and the triangles can be assembled ahead, making them especially good for a dinner party or grazing table.

You know the kind of argument you can have with your sister where, five minutes in, neither of you can remember what started it? My sister and I had one of those in Beersheba when we were teenagers. We had been walking around for what felt like forever, both of us getting more stubborn with every block, until I finally decided that whatever the argument was, we were hungry enough to stop talking about it. 

A specialty café had Greek pastries in the case, and I chose a spinach-filled triangle. My sister and I ate quietly, and somewhere between the first bites and the last crumbs, whatever had started the argument seemed to matter less.
