It started with a paper bag that felt far heavier than I expected.

Every summer market seems to have that one mushroom grower who knows exactly how to draw people in. The table is covered with king oysters as long as your forearm, wide portobellos with dark, velvety caps, and baskets filled with varieties that barely make it to grocery stores. I always tell myself I’ll buy one (or two) for dinner. Somehow I walk away carrying enough mushrooms for half the week, already thinking about what they’ll become.
