Why This Mexican Rice Never Has Leftovers

When summer means feeding a crowd, this Mexican rice keeps things simple and affordable. It belongs beside grilled chicken, beans, tacos, and potluck favorites.

The apartment was small and crowded that day. The windows stayed open because the apartment had no proper air conditioning, and the kitchen always felt a few degrees warmer than the rest of the place. Someone usually had music playing from a laptop on the counter. There were paper plates stacked beside the sink, grocery bags on the floor, and half-finished assignments buried underneath, well, everything.

Money was tight at the time, so the food reflected that. We bought what was cheap, cooked in batches, and shared whatever ended up on the table.
