Tofu Shawarma So Good You Won’t Know The Difference

Tofu shawarma is proof that a vegan shawarma can be every bit as craveable as the classic. After years of recreating shawarma at home, I found that pressed tofu, a fragrant spice blend, and careful browning create crisp, deeply seasoned slices that belong in warm pita bread with tahini and fresh herbs.

One of my favorite parts of this shawarma series has been discovering that shawarma is far more flexible than I ever expected. Before I started testing these recipes, I thought of it as one specific dish built around spit-roasted meat, shaved into thin slices and tucked into pita. 

The longer I cooked shawarma, the more I realized what kept drawing me back had very little to do with the protein itself.
