The Chickpea Tuna Salad That Ended Our Back-to-School Lunch Panic

This chickpea tuna salad is proof that a can of tuna and a can of chickpeas can do much more than sit at the back of the pantry. I’ve made plenty of tuna salad over the years, but this is the one that made me stop tinkering. It’s creamy but not heavy, filling without being dull, and it’s the make-ahead lunch I lean on hardest once school starts again.

The first parent-teacher meeting of the school year had been on my calendar for weeks… which somehow made it even more embarrassing when I forgot about it. The reminder appeared on my phone late in the afternoon, just as I was thinking about what I might make for dinner. Instead, I suddenly had less than an hour to get everyone fed, dressed, and out the door. Leo and Lin were already hungry, and I had done absolutely nothing to prepare lunch.

I opened the refrigerator with the vague hope that something useful would reveal itself. There was celery, half a red onion, cherry tomatoes, and a lemon that had been sitting in the drawer for longer than I cared to admit. The pantry was more helpful. I found a can of chickpeas and a can of tuna packed in olive oil. At that point, lunch finally had a direction. While the children got ready, I drained and rinsed the chickpeas, lightly mashed a few with a fork, and started chopping.
