The Chicken Breast Shawarma Trick Everyone Should Know

The best shortcut I’ve found for homemade chicken breast shawarma doesn’t happen in the skillet. It starts in the freezer. Partially frozen chicken breast slices paper-thin on a mandoline, turning into tender, browned shawarma in 10 minutes, making it one of my favorite quick summer dinners!

There are vegetables that only appear when the mandoline comes out. Cucumbers in July. Radishes in August. Fennel when I remember how much I like the way it perfumes a salad. I keep the blade tucked away for most of the year because it feels like a tool with a season of its own. Every summer, it finds its way back onto my counter beside baskets of tomatoes and herbs from the market, and I start slicing everything thinner than I thought possible.
