This Coconut Milk Chia Pudding Ends Your Breakfast Struggle

This coconut milk chia pudding is the one I actually make when summer turns the kitchen into an oven and I refuse to light the stove. I’ve stirred a lot of chia over the years, and this is the batch that sets thick and creamy every single time. Five minutes at night, and a cool breakfast waits for you in the morning.

Three glasses of chia pudding topped with berries, mint, and jam, with spoons and toasted coconut nearby.

The summer I turned 13, the heat settled in early and stayed for weeks, and I remember one morning better than the rest. I woke up before anyone else because the room was already warm, so I went looking for something cold to eat. On the second shelf of the fridge sat an old jam jar my mother had filled the night before, the paper label half scrubbed off and still a little sticky under my fingers.

Inside was chia soaked in coconut milk, set overnight into a soft pudding with a spoon already resting on top. I swapped it for a colder spoon from the freezer, out of habit, and ate the whole jar standing by the open window. The fan pushed warm air around behind me while the street below slowly woke up. The pudding was cool and creamy and faintly sweet, and it was the first thing that had felt good in days.
