No-Bake Lemon Cheesecake Trifle Cups That Get Eaten First

These lemon cheesecake trifle cups are the dessert I make when I want something bright and cheerful without spending the whole afternoon in the kitchen. After years of tinkering with lemon curd, I know exactly how to get it silky and tart. Each cup layers cake, cream, and curd into a no-bake dessert that tastes like sunshine served in a glass.

The first time I photographed a trifle, I was in my twenties, working on a magazine assignment in a rented studio with terrible fluorescent lighting. The magazine wanted a summer dessert spread, and I had brought too many props and too little confidence.

The recipe was not mine, and honestly the trifle was not particularly good either. But I set the glass cup on a wooden stool near the only decent window in the room, and the afternoon sun hit the layers just right. The lemon curd glowed through the side of the glass like a stained window in a small church. I stood there for a long minute, forgetting to press the shutter.
