Why I Always Cook Extra Rice for This Teriyaki Salmon Bowl

This teriyaki salmon rice bowl is the reason I always cook extra jasmine rice at the beginning of the week. A homemade teriyaki glaze wraps around flaky salmon while crisp vegetables bring freshness, creating a balanced dinner that’s ready in about 30 minutes and fits naturally into busy weekdays.

Grilled salmon with rice, sliced cucumber, avocado, carrots, and radishes, topped with sauce and sesame seeds.

There is a point every summer when I stop cooking rice for dinner and start cooking rice for the week.

It sneaks up on you. A little extra goes into the pot on Monday because I know tomorrow will be busy. By Tuesday, the container waiting in the refrigerator has turned into something I look forward to. The grain feels firm, it separates more easily, and seems ready for anything. By Wednesday, I am making extra on purpose because cold rice has become part of the plan.
